TACO CASSEROLE RECIPE

Ingredients:

1 cup onions, chopped
3 cloves garlic, sliced
2 lbs. lean ground beef
1 250ml can green chiles
2 pkgs. taco seasoning
black pepper to taste
3 cups sharp cheddar, shredded
3 cups Fritos corn chips
2 cups shredded iceberg lettuce
1 cup tomatoes, diced
1 cup salsa
1 cup sour cream
1⁄2 cup sliced green onions
2 jalapeno peppers (optional)

How to make it

  1. Preheat the oven to 350 F. Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the onions, garlic and ground beef until the beef is browned. Drain excess grease.
  3. Stir in the green chiles, taco seasoning and pepper. Simmer for a few minutes.
  4. Spread half the beef mixture in the bottom of the prepared baking dish. Top with 1 1/2 cups of the cheddar cheese and 1 1/2 cups of the Fritos.
  5. Spread the remaining beef mixture over the Fritos. Top with the remaining cheddar cheese and Fritos.
  6. Bake for 20 minutes, until the cheese is melted. Allow to stand for 5 minutes, then top with lettuce, tomatoes, salsa, sour cream and green onions. Slice and serve.

Notes:

For extra spice, add sliced jalapeno peppers. You can also add black olives, beans or corn. Leftovers can be refrigerated up to 3 days. Reheat individual servings in the microwave.
